Vegan Irish Brown Bread

Ingredients

Bread

  • 4 cups Whole Wheat Flour (stone ground preferred)
    • Optional to replace 1/2c flour with wheat germ or oatmeal to provide more texture
  • 3 tablespoons honey or molasses
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 1/2 cups (340g) soy butter milk
    • soy milk + 1-1/2 T vinegar
  • 1 large egg
  • 4 tablespoons melted butter or 1/4 cup vegetable oil

Topping

  • 1 tablespoon (14g) melted butter

Instructions

  1. Preheat the oven to 375°F. Grease a 1 1/2 to 2-quart baking dish, or an 8″ or 9″ cast-iron skillet or cake pan that’s at least 1 1/2″ deep.
  2. In a large bowl, stir together the flour, baking soda, and baking powder.
  3. Put vinegar in a smaller bowl, add soymilk to bring up to 1-1/2 cups. This is the soy buttermilk.
  4. Whisk together the soy buttermilk, egg, and melted butter or oil.
  5. Make a well in the dry ingredients and pour in the liquids. Stir together until blended and no dry spots remain; the dough will be soft and sticky. In fact, it’s probably more of a stiff batter than a soft dough.
  6. Scoop the dough into the prepared pan, mounding it in the center. Brush the top with the melted butter. Wait 5 minutes for liquid to be absorbed by the flour before baking.
  7. Bake the bread for 35 to 45 minutes, or until it tests done (a cake tester inserted into the center will come out clean.) Remove it from the oven, and serve warm.

  • 2 cup flour
  • 4 t baking powder
  • 1/2 t salt
  • 1/2 t cream of tarter
  • 2 t sugar
  • 1/2 cup shortening
  • 2/3 cup milk or cream

Mix dry ingredients together. Cut in shortening until coarse crumbs. Stir in milk all at once. Knead for 30 sec-
onds (as little as possible). Roll out, cut.

Can brush melted butter on tops before baking.

Bake 450 ° for 10-12 minutes.

Irish Soda Bread

Irish soda bread, sometimes referred to as Bastible Cake, is a great bread to make for St. Patrick’s Day or any other time of the year. For this yummy Irish soda bread recipe, you will need:

One pound and two ounces of strong white or strong whole meal flour
Salt
Cream of tartar
Bicarbonate of soda
Milk

1. In a large bowl, combine the 1 pound and two ounces of strong white or strong whole meal flour (which ever you prefer to use) with 2 teaspoons of salt, 1 teaspoon of bicarbonate of soda, and 2 teaspoons of cream of tartar.
2. Add 1/2 pint of milk and mix well. The dough should be soft when you finish mixing it.
3. Grease a baking sheet. Mold the bread dough into a ball and place it on the greased baking sheet. With a knife, cut a 3/4 inch deep cross on the top of the dough.
4. Use a 7” cake tin to cover the ball of dough.
5. Preheat your oven to 425 degrees. Place the baking sheet in the oven and let the bread cook for 35 minutes.
6. Once the bread is finished cooking, allow it to cool on a wire rack before serving.

Mac & Cheese Cupcakes

Muffins:

  • 1/3 cup shortening, plus some for pan
  • 1 tbsp salted butter
  • 1 cup corn kernels
  • 1 cup all-purpose flour
  • 1/3 cup sugar
  • 2 tsp. baking powder
  • 3/4 tsp salt
  • 1 cup yellow corn meal
  • 1 cup milk
  • 1 large egg, beaten

Preheat oven to 400 degrees. Grease muffin cups.

In a medium-size skillet, melt butter over medium-high heat. Add corn and cook occasionally, until corn is softened and some kernels are golden brown (about 5 mins). Remove from heat and set aside.

In a medium bowl, whisk together flour, sugar, baking powder and salt. Stir in corn meal. Using pastry blender or fork, cut in shortening until the mixture resembles coarse meal. Add milk, egg, and corn, stirring until just combined.

Fill muffin cups 2/3 full with batter. Bake 16-18 mins. Remove from pan and cool completely before frosting.

Cliffs Notes Version: Use a boxed corn muffin mix and add sauteed corn to it.

Frosting:

  • 1 box mac and cheese
  • 1/4 cup butter
  • 1/4 cup milk
  • 8 oz cream cheese

Prepare pasta as directed on box. In a small saucepan over low heat, combine cheese powder, butter and milk. Stir until well blended. Remove from heat. In a small bowl, combine a few tablespoons of cheese mixture with 1/2 cup of the cooked and drained pasta.

In a medium bowl, beat together the remaining cheese mixture and cream cheese using an electric mixer until smooth.

Spread a dollop of cheese over each cooled muffin. Top with a few pieces of coated macaroni. Serve promptly.

Aunt Holly’s Banana Bread

  • 3 to 4 ripe bananas
  • 1/4 cup melted butter
  • 1 cup sugar
  • 1 1/2 cups flour
  • 1/4 teaspoon salt
  • 1 egg, beaten
  • 1 teaspoon baking soda
  • Chocolate chips (as many as you want!)

Preheat oven to 350°F. Mash the bananas in a bowl. Add all the
remaining ingredients and mix well with a wooden spoon. Bake in a
buttered loaf pan until a toothpick stuck into the bread comes out
clean, 55 to 60 minutes. Slice and serve.
